Representative Korean traditional food which is made from Meju.
To make Meju, first of all, dried beans are boiled. After boiled,
Yellow Koji is added into the boiled soybeans
and then it is fermented in a specially designed temperature control storage room for several days.
Lastly, the fermented soybean are dried and we call the fermented dry soybeans ‘Meju’.
Doenjang is what Meju is fermented more with water and salt.
